1 unpeeled red apple, cored and chopped
1 unpeeled Granny Smith apple, cored and chopped
1 carrot, grated
½ cup finely chopped red bell pepper
2 green onions, finely chopped
⅓ cup mayonnaise
⅓ cup brown sugar
1 tablespoon lemon juice, or to taste

Steps:

  • In a large bowl, combine cabbage, red apple, green apple, carrot, red bell pepper, and green onions. In a small bowl, mix together mayonnaise, brown sugar, and lemon juice. Pour dressing over salad.

4 cups shredded cabbage
1 large apple, chopped
3/4 cup raisins
1/2 cup chopped celery
1/4 cup chopped onion
1/4 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon sugar
1 tablespoon olive oil
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a serving bowl, combine the cabbage, apple, raisins, celery and onion. In a small bowl, combine the remaining ingredients. Pour over cabbage mixture and toss to coat. Cover and refrigerate for at least 30 minutes.

1 cup mayonnaise
1/3 cup poppy seeds
1/3 cup honey
2 teaspoons kosher salt

1 medium cabbage, cored, finely shredded
2 large carrots, peeled, julienne
1 bunch scallions, thinly sliced
1/2 cup finely minced parsley leaves, optional
4 Fuji apples, peeled, cored, julienne

Steps:

  • Prepare the Poppy Seed Dressing. In a medium bowl, combine all the ingredients together until well blended. Set aside.
  • Prepare the salad. In a large bowl, combine the cabbage, carrots, scallions, parsley, and apples. Pour in the reserved dressing and toss until well blended. Refrigerate at least 1 hour before serving, mixing the salad at least once to evenly distribute the dressing.

2 stalks of peeled and chopped celery

1/2 cup sour cream
1/4 cup mayonnaise or 1/4 cup Miracle Whip
2 -3 tablespoons sugar

Steps:

  • Thinly slice the apples into a small bowl.
  • Stir in two tablespoons of lemon juice onto the apple.
  • In a large bowl, combine the coleslaw, onion, celery, cranberries, and walnuts.
  • Stir in the apples.
  • In another small bowl, combine sour cream, mayo, sugar, salt, pepper, and remaining lemon juice.
  • Poor the wet ingredients onto the coleslaw mix and combine.
  • Serve chilled.

4 ½ cups shredded red cabbage
3 tablespoons coarse kosher salt
2 tablespoons apple cider vinegar
2 large apples, cored
2 large carrots, grated
½ cup fat-free mayonnaise
½ cup fat free sour cream
1 teaspoon celery seed
ground black pepper to taste

Steps:

  • Place a large colander into the sink. Place the coleslaw mix and red cabbage into the colander. Sprinkle lightly with salt, toss, and allow to stand 15 minutes.
  • Pour the vinegar into a large bowl. Grate apples into the bowl and toss with vinegar to keep from turning brown. Stir in the grated carrots, mayonnaise, sour cream, and celery seed until evenly coated. Season with black pepper to taste.

1 cup shredded red cabbage
2 ¼ teaspoons kosher salt, plus more as needed
2 cups kohlrabi matchsticks
2 cups Granny Smith (or other green apple) matchsticks
⅓ cup minced fresh parsley, plus ¼ cup whole leaves
¼ cup fresh lime juice
⅓ cup unseasoned rice vinegar
1 tablespoon shoyu
1 teaspoon coconut palm sugar
½ cup safflower oil
Freshly ground white pepper

Steps:

  • Combine the cabbages in a large bowl. Sprinkle with 2 teaspoons of the kosher salt. With clean hands, massage the cabbage until soft and wilted, about 3 minutes. Transfer the cabbage to a colander set in the sink and rinse the bowl. Put a plate on top of the cabbage and weight it (a 28-ounce can of tomatoes works well for this). Let sit for 1 hour. Rinse the cabbage in cold water and let drain for 20 minutes. Wipe the bowl with a clean kitchen towel.
  • Return the cabbage to the bowl and add the kohlrabi, apples, and minced parsley. Toss well to combine. Set aside.
  • In a blender, combine the lime juice, vinegar, shoyu, sugar, and ¼ teaspoon salt. With the blender running, slowly pour in the safflower oil through the hole in the lid and blend until emulsified. Season with salt and white pepper to taste.
  • Pour enough of the dressing over the salad to lightly coat, toss, and garnish with the parsley leaves, then serve.
