¼ cup white sugar
2 tablespoons cocoa powder
1 pinch ground cinnamon
1 pinch salt
¼ cup water
2 tablespoons canola oil
1 splash vanilla extract

Steps:

  • Stir flour, sugar, cocoa powder, cinnamon, and salt together in a microwave-safe mug. Stir water, oil, and vanilla extract into flour mixture with a fork until smooth.
  • Microwave until set, 1 to 5 minutes.

2 tablespoons melted butter or 2 tablespoons oil
2 tablespoons milk or 2 tablespoons chocolate milk
1/4 teaspoon vanilla extract
1 dash salt
2 tablespoons white sugar, depending on how sweet you like it
2 tablespoons unsweetened cocoa powder
4 tablespoons flour
to make triple chocolate add chocolate milk, chocolate chips, and serve with chocolate syrup

Steps:

  • In a coffee mug, add water/milk, melted butter/oil, a dash of salt and vanilla extract. Whisk well.
  • Add cocoa powder, whisk well. Add sugar, whisk well. Add flour, whisk well.
  • Microwave for 60 seconds. Center should be slightly molten. Careful not to overcook.

4 tablespoons (1/4 cup) all-purpose flour
4 tablespoons (1/4 cup) unsweetened cocoa powder
3 1/4 tablespoons dark brown sugar
1/2 teaspoon baking powder
A pinch of salt
6 tablespoons regular or dairy-free
2 tablespoons any neutral vegetable oil (I used sunflower oil)
1/2 teaspoon vanilla extract
1 tablespoon + 1 teaspoon semi-sweet chocolate chunks or chips
2 tablespoons chopped walnuts
For serving (optional):
Chocolate walnuts
Whipped cream of vanilla ice cream
Berries of your choice
Chocolate or caramel sauce
NOTE: Some ingredients can be replaced with their vegan counterparts.

Steps:

  • In a microwave-safe mug, add flour, cocoa, sugar, vanilla, salt, baking powder, oil, and milk.
  • Whisk briskly until you get a smooth lump-free batter.
  • Add in the 2 tablespoons chopped walnuts, and 1 tablespoon chocolate chips.
  • Mix again until everything is combined. Clean the edge of the cup.
  • Sprinkle with some chocolate chips/chunks. Using a paper napkin, clean the inner edge of the cup.
  • Cook in a microwave for about 2 minutes at full power. (My microwave is 1000 watts. So you may need to adjust the time. Start with 1 minute 20 seconds, and then an additional 20-30 seconds or until it gets cooked.)
  • At this point, the top of the brownie is cooked perfectly and is no longer wet. Remove it from the oven and let it cool for a few minutes before eating.
  • Top with toppings like chopped walnuts, whipped cream, berries, and chocolate sauce. Enjoy it warm.

1/4 c all purpose flour
1/4 c brown sugar, light, firmly packed
2 Tbsp unsweetened cocoa
pinch salt
2 Tbsp canola oil
2 Tbsp milk

Steps:

  • 1. Spray mug or ramkin lightly with Pam; set aside. NOTE: I used a 4 to 6 oz ramkin.
  • 2. Mix flour, brown sugar, cocoa and salt until no lumps remain. Stir in oil and milk. NOTE: I mixed this up in a large measuring cup. Original recipe instructs to mix in ramkin. I decided to spray my ramkin to ensure the brownie would not stick to dish for easier clean up and to use a measuring cup to mix it up.
  • 3. Spoon into ramkin. Microwave 1 minute on high. If you have a powerful microwave, check after 30 seconds. It's done when it's puffed and springy to touch. NOTE: it will still be slightly gooey on top. A total of 1 minute should do it but if not, microwave an additional 15 seconds and check again.
