I love this recipe, especially while babysitting younger kids (they love this) and during the hot summers (when it's unbearable to turn the oven on). It's quick, easy and clean.

- In a coffee mug, add water/milk, melted butter/oil, a dash of salt and vanilla extract. Whisk well.
- Add cocoa powder, whisk well. Add sugar, whisk well. Add flour, whisk well.
- Microwave for 60 seconds. Center should be slightly molten. Careful not to overcook.
- Enjoy with a spoon. Careful, brownie will be hot.

- In a microwave-safe mug, add flour, cocoa, sugar, vanilla, salt, baking powder, oil, and milk.
- Whisk briskly until you get a smooth lump-free batter.
- Add in the 2 tablespoons chopped walnuts, and 1 tablespoon chocolate chips.
- Mix again until everything is combined. Clean the edge of the cup.
- Sprinkle with some chocolate chips/chunks. Using a paper napkin, clean the inner edge of the cup.
- Cook in a microwave for about 2 minutes at full power. (My microwave is 1000 watts. So you may need to adjust the time. Start with 1 minute 20 seconds, and then an additional 20-30 seconds or until it gets cooked.)
- At this point, the top of the brownie is cooked perfectly and is no longer wet. Remove it from the oven and let it cool for a few minutes before eating.
- Top with toppings like chopped walnuts, whipped cream, berries, and chocolate sauce. Enjoy it warm.

2-MINUTE MUG BROWNIE
When I found this recipe, I knew I had to try it. Just the 2 of us here and a large pan of brownies is great when the grands are around but just to much for the 2 of us. I have no self control when it comes to sweets so this is perfect for me! This brownie in a mug is pure genious! Not to mention it's an awesome brownie! Serve...

- 1. Spray mug or ramkin lightly with Pam; set aside. NOTE: I used a 4 to 6 oz ramkin.
- 2. Mix flour, brown sugar, cocoa and salt until no lumps remain. Stir in oil and milk. NOTE: I mixed this up in a large measuring cup. Original recipe instructs to mix in ramkin. I decided to spray my ramkin to ensure the brownie would not stick to dish for easier clean up and to use a measuring cup to mix it up.
- 3. Spoon into ramkin. Microwave 1 minute on high. If you have a powerful microwave, check after 30 seconds. It's done when it's puffed and springy to touch. NOTE: it will still be slightly gooey on top. A total of 1 minute should do it but if not, microwave an additional 15 seconds and check again.
