2 ounces whole wheat penne
1 small onion, diced
2 garlic cloves, minced
1 teaspoon olive oil
1 cup frozen broccoli
3 Italian tomatoes, diced
1/4 cup part-skim ricotta cheese
1/4 teaspoon salt
1 tablespoon parmesan cheese, grated
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon italian seasoning

Steps:

  • saute onions in olive oil over medium heat.
  • add garlic, salt, pepper flakes, and italian seasoning when onions turn translucent.
  • add tomatoes and frozen broccoli, cook until tomatoes are softened.
  • meanwhile boil pasta water and cook penne until al dente.
  • transfer pasta to sauce pan with vegetables and add ricotta.
  • gently toss to combine and finish with parmesean.
