White Choc & Raisin Cookies image

Delicious healthy cookies to pop in the kids packed lunch/ or enjoy (as my other half did) with a nice cup of tea in front of the tv!!!

Steps:

  • Beat butter or margarine and brown sugar together in a mixing bowl until light and fluffy
  • Add the two eggs and mix well
  • In a separate bowl, combine oatbran, flour, baking powder and salt
  • Add the flour/bran mix to butter mix gradually, mixing well after each addition
  • Add raisins and white chocolate chunks/chips, mix well
  • Prepare a baking tray with greaseproof paper, grease and dust with flour, shaking off any excess
  • Drop rounded teaspoons of mix on the the prepared tray, flatten slightly (should make 12-14)
  • Bake for 15 minutes on 190C or until golden brown. Cool on wire rack
