WARM BEAN SPINACH SALAD image

Yield Serves 4.

Number Of Ingredients 13

1/4 cup olive oil
2 cups sliced mushrooms
2 cloves garlic, minced
1 cup sliced red onion
1 lb green beans, trimmed
1 sweet red pepper, sliced
1/4 cup oil-packed sun-dried tomatoes, chopped
1/4 cup red wine vinegar
2 tbsp liquid honey
1/4 tsp s&p
4 cups packed torn spinach leaves
1/2 cup crumbled feta cheese
1/4 cup black olives

Steps:

  • In a non-stick skillet, heat 1 tbsp oil over medium heat. Add mushrooms, garlic and onion; cook for 5 mins. Add beans and red pepper, cover and cook, stirring occasionally, until beans are tender/crisp, 5 to 7 mins. In small bowl, whisk together remaining oil, tomatoes, vinegar, honey, s&p; drizzle over bean mixture. transfer to large bowl and toss to coat. Add spinich, half of the feta and the olives; toss well. Sprinkle with remaining feta.
