VANILLA-ORANGE GLAZED CARROTS image

Vanilla-Orange Glazed Carrots
Makes: 5 cups | Active Time: 40mins | Total Time: 40mins
2 Tbsp Pure Olive Oil
2 lbs Carrots, peeled, cut on the bias in 1/4-inch slices (about 6 cups)
1 bay leaf
1 vanilla bean, split in half lengthwise, seeds reserved
1/8 - 1/4 tsp cayenne pepper
sea salt to taste
1 cup Premium No-Pulp 100% Orange Juice
1 cup Vegetable Culinary Stock
1 cup Heavy Cream
4 Tbsp butter, diced
1/2 bunch green onions, green part only, sliced thinly on the bias
1 pkg(0.25 oz) Italian parsley, chopped

Steps:

  • You'll Need: Braising Pan Directions: Heat oil on HIGH in braising pan. Add carrots, bay leaf, vanilla pod and seeds, and cayenne. Salt to taste. Cook, stirring, 5 min until carrots just begin to soften. Add orange juice, vegetable stock, and heavy cream. Cook, stirring, 12-15 min, until sauce is reduced to a syrupy consistency and carrots are tender. Season to taste with salt. Turn off heat. Add butter, green onions, and parsley. Stir until butter is melted. Remove vanilla pod and bay leaf. Chef Tip(s): Scrape out vanilla seeds by running the back of the knife down the inside of the split bean.
