Tuna Stuffed Cucumber Buttons image

Our first garden this year produced some 'round-shaped' cucumbers with course seeds, but with great flavor, texture, and juicy. I didn't want to waste anything I pulled from our first attempt at a garden, including these cucumbers. So when I cut them in half and cleaned out the seeds, I envisioned a stuffed cup of some kind. Number Of Ingredients 11

1 can(s) tuna, packed in water (drained)
3 small cumbers (5-inch-long seeds scooped out)
2 sprig(s) green onions (minced tops and bottoms)
3 tablespoon(s) red bell pepper (minced)
4 small cherry tomatoes (chopped small)
1 tablespoon(s) mayonnaise (heaping spoon and with canola)
1 small juice of 1 lime
1 teaspoon(s) basil, fresh
1 dash(es) garlic powder
- salt and pepper to taste
TUNA STUFFED CUCUMBER CUPS

Steps:

  • Drain tuna! Peel cucumbers, scoop out seeds, level bottom so it sets flat; mince part you cut off and add to ingredients.
  • Mince green onions, bell pepper, tomatoes, basil (I used dried fresh basil, but fresh is always the greatest, however). Gently toss all ingredients with tuna.
  • Mix mayo, lime juice, garlic powder, salt and pepper; then mix with other ingredients. Stuff cucumber cups, serve with fruit of your choice; delicious with grapes on the side.
