SWEET POTATO GRATIN image

Number Of Ingredients 7

1 garlic clove, minced
3 T unsalted butter
1 T all-purpose flour
1 cup heavy cream
4 sweet potatoes, peeled and cut (1/4")
1/4 cup fine fresh bread crumbs
1/4 cup freshly grated parmesan cheese

Steps:

  • In a small skillet, cook the garlic in 2 T of the butter over moderately low heat, stirring until it is softened. Add flour and cook mixture, stirring for three minutes. Stir in the cream and bring the mixture just to a simmer, stirring occasionally. Arrange the potatoes in layers in a well buttered 1 1/2" gratin dish, seasoning them with salt and pepper. Pour the cream mixture over them and bake in a preheated 325 degree oven for 1 hour. Remove, baste the top w/cream mixture and sprinkle with breadcrumbs and parmesan. Drizzle with remaining 1 T butter. Bake at 325 degrees for 15 minutes, then put under broiler @ 4" away from heat for 1-2 minutes or until top is browned.
