Stir Fried Eggplant image

Number Of Ingredients 9

1 piece Red Chili, Jalapeño or Fresno
1 tablespoon Honey
3 pieces Eggplant, maybe Japanese
1/4 pound Ground pork or Chicken (can leave out for veggie)
3 cloves Garlic, thinly sliced
1 teaspoon Sesame Seeds, toasted
1/2 cup Basil leaves
2 tablespoons Unseasoned Rice Vinegar
2 teaspoons Soy Sauce

Steps:

  • 1. Finely chop pepper and soak in honey with salt.
  • 2. Slice eggplants into sicks
  • 3. Heat oil and stir fry eggplant until crispy, remove from pan
  • 4. Add oil and cook meat if using.
  • 5. Otherwise and in garlic and sesame seeds, stir then add basil until wilted.
  • 6. Add soy and vinegar to honey pepper mix.
  • 7. Add eggplant then sauce back into pan. Season with S & P.
