STEAMED STUFFED ARTICHOKES image

Number Of Ingredients 10

2 whole artichokes
1/2 cup fine bread crumbs
1 tsp dried oregano
2 tbsp fresh parsely, chopped
1/4 cup onion, finely chopped
2 cloves of garlic, finely chopped
parmesan cheese for grating
1 chicken sausage
1/2 cup chicken broth
1/4 cup white wine

Steps:

  • Brown the sausage in a pan. Add onions, garlic and oregano and saute briefly. Season with salt and pepper. Transfer mixture to a bowl and add bread crumbs to soak up the yumminess. Add parsley. Allow to cool while you prepare the artichokes. Prepare the artichokes by slicing the stems off close to the base. Chop off the top part of the artichoke, about 1/2 inch. Trim the thorny tops from the leaves and wash thoroughly. With clean hands, stuff each artichoke leaf with a bit of the sausage mixture. Be careful not to put too much. Work your way from bottom to top and when you reach the flat top, simple sprinkle over. Place the artichokes in the bottom of a pot that is small enough to hold them in place. Add water up to the base of the artichokes, then add white wine to the water. Sprinkle tops with parmesan cheese. Put over heat and steam until done, about 25 minutes. The bottom leaves will be loose and pull out easily.
