Yield 4

Number Of Ingredients 8

4 tbsp of Sugar-Free Maple Syrup*
2 tbsp of Canola Oil*
1 tsp of Cinnamon*
2 medium Sweet Potatos
4 medium Peaches or one Bottle of Kroger sugar free sliced peaches
1 medium sweet onion, peeled and cut into eighths.
1 pound of large shrimp
Spicy Chipotle Spread

Steps:

  • Preheat oven to 450 degrees. Prepare in a separate bowl all ingredients with a * and then whisk together. Skin sweet potatoes and cut into 1 inch chunks and place in separate bowl. Cut peaches in slices or dump sliced peaches into separate bowl. Pour 3/4 of syrup mixture into sweet potato bowl and the remaining over peaches; toss both. Spread the potato mixture into large baking dish and roast 10 minutes; toss again and roast again 8 to 10 minutes. Then toss again and add onions and roast for 12-15 minutes. Then taoss and add the peaches and roast 5 minutes if Kroger beaches or roast 10 minutes if fresh peaces, or until the potato and onion are fork tender and the peaches are carmelized. In the meantime, sautee the shrimp in a lightly sprayed pan along with the Spicy Chipotle Spread. Add more spread directly to the shrimp as you increase the heat. Chicken can be substituted for shrimp.
