Steps:
- Simmer meat 2 hours. Reserve stock. Heat oil & sweat onions until soft. Add garlic, cumin, coriander, chilies, tomatoes, tomato purée, sugar, bay leaves, salt & pepper and cook 5 minutes. Add 1/4 pint of reserved stock & simmer uncovered 35 minutes or until sauce is slightly thickened. Discard bay leaves. Shred meat & add to sauce with coriander. Heat & serve.
