Spicy Asian Cucumbers image

We love cucumbers and enjoy trying different salads. We had this and it was a great addition to a stir fry meal we had. Very refreshing and you can make it as spicy as you want by adding more red pepper flakes. I think the hardest thing is getting use to calling cucumbers a fruit when I am posting a recipe for them.

Number Of Ingredients 9

1 english cucumber
1 tsp salt
1 Tbsp rice vinegar
2 tsp sugar
2 tsp soy sauce
1/2 tsp sesame oil
2 sliced scallions
1 clove minced garlic
1 pinch red pepper flakes

Steps:

  • 1. Chop the cucumber and put in a bowl and add the 1 teaspoon of salt. Let sit for 10 minutes.
  • 2. Whisk the rest of the ingredients in a large bowl.
  • 3. Drain the cucumbers and toss with the dressing; season with salt if needed.
  • 4. Top with chopped cilantro if you want.
