So-Easy Sloppy Joes image

Everybody in the family will love the zesty, fun flavor of this simple staple. Try it spooned over warmed cornbread if you don't have buns. -Karen Anderson, Cuyahoga Falls, Ohio

Number Of Ingredients 9

1-1/2 pounds ground beef
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (6 ounces) tomato paste
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon spicy brown mustard
1/4 teaspoon salt
6 sandwich buns, split
Fresh arugula, optional

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomatoes, tomato paste, ketchup, brown sugar, mustard and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Serve on buns. Top meat with arugula. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary. Serve on buns with arugula.
