Small Batch Peanut Butter Cookies image

I down-sized the recipe I got from my Mom over 50 years ago to make fewer cookies for just the two of us.

Number Of Ingredients 9

1/3 cup(s) granulated sugar
1/3 cup(s) brown sugar, firmly packed
1/3 cup(s) shortening
1/3 cup(s) peanut butter
1/4 teaspoon(s) baking soda
1 1/2 teaspoon(s) water
1/2 teaspoon(s) vanilla extract
1 large egg
1 cup(s) all purpose flour

Steps:

  • In a medium-size bowl cream together the sugars, peanut butter and shortening. In a small cup dissolve the baking soda in the water, add the vanilla and egg, slightly beat together and stir into the creamed mixture. Add the flour and mix well.
  • Roll dough into 2 1/2 balls or drop from cookie scoop onto an ungreased cookie sheet. Flatten with a fork or meat mallet which has been dipped in flour. Bake at 375 degrees for 10-12 minutes or until lightly browned. Remove to rack to cool.
