Rainbow Fried Rice image

Number Of Ingredients 13

5 Chicken tenders, marinated in soy sauce and pre-cooked til brown
1/2 pound Shrimp, peeled and deveined
3 tablespoons Vegetable Oil
2 Eggs beaten with 1/2 tsp sesame oil
2 Garlic cloves, chopped
1 tablespoon Ginger, chopped
3 Green onions, chopped
1 Red pepper, chopped
16 Snow peas, trimmed, julienned
1/2 cup Peas
4 cups Cooked Rice
2 tablespoons Oyster Sauce
1 tablespoon Soy Sauce

Steps:

  • Heat 2 Tablespoons oil in wok, pour in beaten eggs. Make pancake, cook for 1-2 mins until just set. Move to plate, julienne.
  • Heat wok on high. Add 1 Tbsp oil, and when hot, add ginger, garlic, green onion, red pepper, snow peas, peas. Stir fry for 1 min until heated through. Add chicken and shrimp. Toss for 1 min or until shrimp turn pink.
  • Add Rice, breaking up any lumps before adding, and toss for 1-2 minutes until mixed and heated through. Add a little oil if rice sticks to wok.
  • Add oyster and soy sauce, toss in egg shreds, stir until combined.
