Steps:
- Heat 2 Tablespoons oil in wok, pour in beaten eggs. Make pancake, cook for 1-2 mins until just set. Move to plate, julienne.
- Heat wok on high. Add 1 Tbsp oil, and when hot, add ginger, garlic, green onion, red pepper, snow peas, peas. Stir fry for 1 min until heated through. Add chicken and shrimp. Toss for 1 min or until shrimp turn pink.
- Add Rice, breaking up any lumps before adding, and toss for 1-2 minutes until mixed and heated through. Add a little oil if rice sticks to wok.
- Add oyster and soy sauce, toss in egg shreds, stir until combined.
