QUINOA WITH BLACK BEANS & CORN image

Number Of Ingredients 12

1 tsp vegetable oil
1 onion, chopped
3 cloves garlic, chopped
3/4 cup uncooked quinoa
1- 1/2 cup vegetable broth
1 tsp groud cumin
1/4 tsp cayenne pepper
salt & pepper to taste
1 cup corn kernals
12 15 oz cans black beans, rinsed & drained
1/2 cup chopped fresh cilantro
(Add fresh tomatoes, zucchini, lemon juice, red bell pepper, green chilis, etc. as desired)

Steps:

  • 1) Heat oil in a medium saucepan over med. heat. Stir in onion first, then garlic, & sauté until lightly browned 2) Mix the quinoa into the saucepan & cover with vegetable broth. Season with cumin, cayenne, salt & pepper. Bring to a boil. Cover, reduce hit & simmer 20 minutes. 3) If using frozen corn, stir it in & simmer 5 min until heated through. Mix in black beans & cilantro (for canned corn, add with beans.)
