Pretzel ice-cream sandwiches image

24 pretzel crisps
1 pint vanilla ice cream
2 ounces bittersweet dark chocolate, chopped
1 teaspoon peanut butter
1/4 cup virgin coconut oil

Steps:

  • Freeze 2 plates for at least 10 minutes
  • Warm up 1 oz ice cream scooper
  • Top 1 pretzel with 1 oz ice cream scoop, top with another pretzel and press down. Do them all and re-freeze for at least 15 minutes.
  • Combine chocolate, peanut butter, coconut oil and large pinch kosher salt in small saucepan. Heat over medium-low, stirring until mixture is smooth and then remove from heat.
  • Remove sandwiches from freezer, drizzle with sauce with a spoon and re-freeze. Chill at least 30 minutes.
