Poor Man's Raisin Cake image

I found this recipe in a cookbook my Momma put together at least 25 years ago. There is no listing as to where it came from. Actually the recipe was a little vague to I just tweeked to be mine

Number Of Ingredients 13

1/3 c milk
1 c raisins
2 c water
1 tsp baking soda
2 Tbsp rounded of shortening aka crisco
1 c sugar
2 c flour
1 tsp baking powder
1 pinch salt
1 pinch all spice
1 pinch nutmeg
1 pinch cinnamon
1 pinch ginger

Steps:

  • 1. cook water and raisins down to 1C juice. Add soda and shortening to liquid while warm. Add sugar and flour (enough to make a light batter) but not stiff. Then add Baking powder, salt allspice, nutmeg, cinnamon and ginger. Mix Well and bake 350 degrees for about 25 min. Depending on your oven.
