Penne Pasta, Chicken, Spinach, Tomatoes with Balsamic Vinaigrette image

Hello my name is Leah and I'm addicted to balsamic vinegar. I think I might have a little problem. I don't post too many healthy recipes on here but this one is too good not to share. This makes a big bowl of pasta and you would think that it could serve about 8 adults but we all got seconds so there for it only served 4. Pair it...

Number Of Ingredients 10

1 box 14.5 oz whole wheat pasta
1 lb chicken breast, diced
1/2 c olive oil, extra virgin (divided)
1/4 c balsamic vinegar
2 tsp dijon mustard
salt and pepper, to taste
2 1/2 c firmly packed fresh spinach, chopped
2 1/2 c chopped fresh tomatoes
1/2 c thinly, sliced red onion
1/2 c diced yellow pepper

Steps:

  • 1. Saute chicken in 1 Tbsp olive oil in a med skillet for 5 to 6 min or until done.
  • 2. Whisk together the vinegar and mustard in a small bowl. Gradually whisk in 6 Tbsp olive oil until smooth. Season with salt and pepper to taste.
  • 3. Cook Pasta according to package, drain. Toss together pasta,chicken, vinegar mix, spinach, and remaining ingredients in a large bowl. Season with salt and pepper. Serve hot or cold!
