1 box 14.5 oz whole wheat pasta
1 lb chicken breast, diced
1/2 c olive oil, extra virgin (divided)
1/4 c balsamic vinegar
2 tsp dijon mustard
salt and pepper, to taste
2 1/2 c firmly packed fresh spinach, chopped
2 1/2 c chopped fresh tomatoes
1/2 c thinly, sliced red onion
1/2 c diced yellow pepper

Steps:

  • 1. Saute chicken in 1 Tbsp olive oil in a med skillet for 5 to 6 min or until done.
  • 2. Whisk together the vinegar and mustard in a small bowl. Gradually whisk in 6 Tbsp olive oil until smooth. Season with salt and pepper to taste.
  • 3. Cook Pasta according to package, drain. Toss together pasta,chicken, vinegar mix, spinach, and remaining ingredients in a large bowl. Season with salt and pepper. Serve hot or cold!

12 ounces penne pasta (rotini, or other small shaped pasta)
⅓ cup sun-dried tomatoes (chopped, drained oil reserved)
3 tablespoons olive oil (drained from sun dried tomatoes)
1 pound chicken (boneless and skinless, cut into small cubes)
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
½ teaspoon red pepper flakes
6 medium tomatoes (chopped)
6 cloves garlic (minced)
10 ounces spinach (fresh)
1 cup Parmesan cheese (freshly grated)

Steps:

  • Cook the pasta: Cook the pasta al dente, according to package instructions.
  • Cook the chicken: In the meantime, add the sun-dried tomatoes, olive oil, chicken pieces, salt, pepper, red pepper flakes to a large skillet, and cook over medium heat for 5 minutes or until the chicken is no longer pink.
  • Finish cooking: Add the chopped tomatoes, garlic, and spinach to the skillet and cook for another 3 minutes or until the spinach wilts a little.
  • Combine pasta and sauce: Add the drained pasta to the skillet along with ½ cup of the Parmesan cheese and toss everything together well.
  • Finish and serve: Drizzle some good olive oil over the pasta and sprinkle with remaining Parmesan cheese. Serve immediately.

10 ounces boneless skinless chicken breasts, cut into 1 inch pieces
1 tablespoon olive oil
1 medium onion, chopped
0.25 cup red wine
1 (14.5 ounce) can diced tomatoes with basil, garlic, and oregano, undrained
1 cup Swanson® Chicken Broth
4 ounces uncooked penne pasta
0.75 cup water
4 cups baby spinach

Steps:

  • Season the chicken as desired. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until well browned, stirring often. Remove the chicken from the skillet.
  • Add the onion to the skillet and cook until tender-crisp, stirring occasionally. Add the wine and heat to a boil, stirring to scrape up any browned bits from the bottom of the skillet.
  • Stir in the tomatoes, Swanson® Chicken Broth, penne and water and heat to a boil. Reduce the heat to medium. Cook for 10 minutes or until the penne is tender, stirring occasionally. Return the chicken to the skillet. Cook for 2 minutes or until the chicken is cooked through. Stir in the spinach and cook for 1 minute or until the spinach is wilted.

1 tablespoon ground black pepper, or more to taste
1 tablespoon garlic powder
1 pound boneless skinless chicken breasts, cut into bite-size pieces
1 (14.6 ounce) package penne pasta
5 cups fresh spinach, or more to taste
1 cup grated Parmesan cheese
1 tablespoon red pepper flakes

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Spread butter, 1 tablespoon salt, 1 tablespoon pepper, and garlic powder over chicken breasts on a plate or cutting board.
  • Grill the chicken breasts until no longer pink in the center and the juices run clear, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Pour penne into a colander to drain.

1 tablespoon olive oil
3 cloves garlic, chopped
2 (8-ounce) boneless, skinless chicken breasts, halved
8 ounces baby spinach
2 tablespoons balsamic vinegar
1/3 cup low-sodium chicken broth
1 cup low-sodium canned chopped tomatoes with juice
2 cups whole wheat couscous, cooked

Steps:

  • Heat a large saute pan over medium-high heat. Add the olive oil and heat. Add the garlic and cook for 1 minute. Add the chicken and cook about 4 minutes per side, or until cooked through and juices run clear. Remove the chicken and set aside. To the same pan, add the spinach and cook just until wilted, about 1 to 2 minutes. Remove from the pan and set aside. Lower the heat to medium and add the balsamic vinegar and chicken broth to the pan and stir, scraping the bottom of the pan to remove any browned bits. Add the tomatoes, bring to a simmer and cook 3 to 5 minutes.
  • Place the couscous in a serving bowl. Top with the spinach, chicken and balsamic-tomato sauce.

1 medium onion, minced
1 teaspoon minced fresh rosemary
1 (28 ounce) can whole tomatoes, drained and chopped

Steps:

  • Bring 4 quarts water to a boil in a big pot for cooking the pasta.
  • Heat the oil in a large skillet; add in onion and saute over medium heat until translucent, about 5 minutes.
  • Stir in the rosemary and cook for 30 seconds to release its flavor.
  • Add in the tomatoes, salt, and pepper to taste; simmer until the sauce thickens, about 10 minutes.

I put this recipe together one day and really loved it! I used skim milk, whole wheat penne pasta, and Smart Balance 50/50 butter blend to make it a little healthier yet still creamy and satisfying! Next time I might add some mushrooms to add some more flavor. Special note: I prepared all of the penne but ended up leaving about two servings out because I like a more saucy pasta.

1 (13 1/4 ounce) package whole wheat penne
1 -2 boneless chicken breast
1 (14 1/2 ounce) can Italian-style diced tomatoes
2 cups Baby Spinach
1/4 cup Smart Balance Omega Plus
2 garlic cloves, minced (more or less according to taste)
1 cup skim milk
2 tablespoons flour, divided
1/3 cup parmesan cheese

Steps:

  • Prepare pasta according to package directions while preparing the sauce.
  • Cut chicken up into cubes and set aside.
  • Melt butter in a large skillet over medium heat.
