Peanut Brittle image

So many folks find this hard to make. Peanut Brittle is simple if you have the right tools. A deep pan and a candy thermometor. Brittle should be light and airy... Follow the instructions and enjoy!

Number Of Ingredients 6

1 cup(s) white karo syrup
1 cup(s) white sugar
1 1/4 cup(s) raw spanish peanuts
1/4 teaspoon(s) salt
1 tablespoon(s) butter
1 teaspoon(s) (heaping) of baking soda

Steps:

  • Add all ingredients (except Baking Soda) in a large pan.
  • Stir together and bring to a boil over medium high heat. You must stir this constantly so it doesn't burn. Bring to 290* on a candy thermomoter. (It will change colors and thicken)
  • Remove from heat and add baking soda. Stirring it in quickly, and then pour it onto a lightly greased cookie sheet. DO NOT TIP OR DROP OR SHAKE THE COOKIE SHEET! You will lose the air bubbles if you do so causing the brittle to lose its airiness. Cool completely, loosen from cookie sheet with a spatula and turn the entire piece over, crack with the handle of a table knife. Store in an airtight dish or ziploc. Enjoy!!
