Papa's Burger image

In the basement of Hemingway's home in Cuba in an effort to preserve his legend the JFK Library found many articles, letters, etc. One of the items was a typed recipe for a western Burger/ Papa burger. Unfortunately, many ingredients are no longer available so I have taken liberty to create my own version.

Number Of Ingredients 10

1 pound(s) lean ground chuck
1/2 teaspoon(s) garlic salt
2 - green onions
2 tablespoon(s) capers (rinsed and drained)
1 tablespoon(s) ground sage
1/2 tablespoon(s) soy sauce
1 - egg, uncooked
1/2 cup(s) red wine
1 tablespoon(s) india relish
1/2 teaspoon(s) celery salt

Steps:

  • spread the meat with a fork and add the garlic, onion and dry seasonings and mix with your hand. Let the meat sit for 10 minutes in the refer.
  • Add capers and everything else including the wine and let marinate for ten more minutes. Then, make two thick, juicy patties.
  • Heat the oil in the pan to near smoking. Drop patties in and turn heat to medium. after a few minutes turn up the heat and flip burgers. cook for two minutes and turn down the flame again to med. Both sides should be crispy brown but pink in the middle.
  • Plate the burger patties with or w/o buns and top with heaping tablespoon of room temp. homemade India Relish.
