PAN SEARED RIB EYE image

1 boneless steak, 1.5 inches thick
Canola oil to coat
kosher salt and ground black pepper

Steps:

  • 1. Bring steak to room temperature 2. Place 10-12 inch cast iron skillet in the oven and heat oven to 500 degrees. 3. Coat steak lightly with oil and season with S&P. 4. When oven reaches temp, remove pan and place on range over high heat. 5. Immediately place steak in the middle of a hot, dry pan. Cook 30 s without moving. 6. Turn with tongs and cook another 30 s, then put pan straight into the oven for 2 minutes. 7. Flip steak and cook for another 2 minutes. 8. Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate.
