Norman's Baked Flounder image

1/2 cup unsalted melted butter, divided
1-2 lb s. fresh flounder
1 sleeve Ritz Crackers
2 tablespoons lemon juice
1 tablespoon garlic salt
2 tablespoons dried parsley leaves
2 tablespoons parmesan cheese
1 1/2 tablespoons paprika

Steps:

  • Preheat oven to 350°F. Cover bottom of 9x13 inch dish with 1/4 cup of the melted butter. Lay fish skin side down in the dish.
  • Butter top of fish with the rest of the butter, sprinkle the Ritz Cracker crumbs lightly on the top of each filet. Add the lemon juice, garlic salt, parsley, parmesan cheese and paprika evenly over each filet.
  • Set oven rack 6 inches below broiler and cook for 15 minutes. During the last four or five minutes turn on broiler to medium. Take fish out with spatula and spoon on the butter.
