MOM'S CARROT CAKE image

Number Of Ingredients 17

CAKE
2 cups flour
1 tsp. baking powder
1/2 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
2 cups sugar
1 cup oil
4 eggs
1 tsp. vanilla
3 cups grated carrot
FROSTING
1 stick butter or margarine, room temperature
8 oz. cream cheese, room temperature
1 lb. confectioners' sugar
1 tsp. vanilla
1 cup chopped pecans

Steps:

  • CAKE Mix together first 5 ingredients. Set aside. In a mixer, beat the sugar, oil, eggs, and vanilla. Slowly beat in dry ingredients. Fold in grated carrots. Pour into three well-greased 8- or 9-inch cake pans. Bake at 350 for 25 to 30 minutes. FROSTING Mix all ingredients together. When cake is completely cool, frost between layers and top of cake.
