Steps:
- CAKE Mix together first 5 ingredients. Set aside. In a mixer, beat the sugar, oil, eggs, and vanilla. Slowly beat in dry ingredients. Fold in grated carrots. Pour into three well-greased 8- or 9-inch cake pans. Bake at 350 for 25 to 30 minutes. FROSTING Mix all ingredients together. When cake is completely cool, frost between layers and top of cake.
