Mini Roast Beef Pizza image

With a handful of toppings on prebaked crusts, these are ready to eat in less than half an hour.

1 tablespoon olive or vegetable oil
1 cup thin bite-size green bell pepper strips
1/2 cup sliced onion
2 oz thinly sliced cooked seasoned roast beef (from deli), cut into strips
2 prebaked Italian pizza crusts (6 inch each)
2/3 cup shredded Swiss cheese (2 2/3 oz)

Steps:

  • Heat oven to 400°F. In 8-inch skillet, heat oil over medium-high heat. Add bell pepper and onion; cook 3 to 4 minutes, stirring frequently, until crisp-tender. Remove from heat. Stir in roast beef.
  • Place pizza crusts on ungreased cookie sheet. Divide roast beef mixture evenly onto crusts. Sprinkle with cheese.
  • Bake 8 to 10 minutes or until cheese is melted and crust is hot.
