Microwave Peanut Brittle (Connie's) image

I think we've been making peanut brittle this way since we got our first microwave:) Don't know how or where we got the recipe but I've been making it with the grandchildren for over twenty years. You'll never believe how easy and delicious this peanut brittle is to make and eat! I've, also done it with walnuts and they were just as good. This holiday peanut brittle makes excellent gifts! My co-workers starting asking for this after Thanksgiving! Enjoy!

Number Of Ingredients 7

1 1/2 cup(s) raw peanuts (or walnuts)
1 cup(s) granulated sugar
1/2 cup(s) light corn syrup
1/8 teaspoon(s) salt
1 teaspoon(s) butter
1 teaspoon(s) vanilia extract, the good stuff
1 teaspoon(s) baking soda, fresh

Steps:

  • Combine nuts, sugar, corn syrup, and salt in a 1 1/2 quart microwave safe container.
  • Cook 8 minutes on high in microwave oven stirring well after 4 minutes. (Be very careful, this mixture gets very hot)
  • Stir in butter and vanilla.
  • Microwave another 2 minutes on high.
  • Add baking soda and quickly stir until light and foamy.
  • Immediately pour onto lightly greased baking sheet; spread to 1/4 inch thickness.
  • When cool break into pieces.
  • Store in airtight container.
