Steps:
- In medium saucepan warm oil and add garlic. Cook for 1 minute. Add couscous and cook until toasted, about 5 minutes. Carefully add the stock and juice of 1 lemon and bring to a boil. Reduce heat and simmer, covered, about 8-10 minutes. In large bowl toss the cooked couscous with olive oil, remaining lemon juice, zest, salt and pepper. Add fresh herbs, craisins and almonds.
