Lizzy's Koushari image

Another recipe from my good friend Lizzy. This is her interpretation of Koushari, an Egyptian dish of rice, lentils, and macaroni with a spicy tomato sauce.

Number Of Ingredients 13

3/4 cup(s) brown lentils
1 cup(s) macaroni, elbow
1 - onion, sliced
2 tablespoon(s) olive oil
1 teaspoon(s) cumin
1/8 - 1/4 teaspoon(s) cayenne
1 - bay leaf
- salt and pepper to taste
3 clove(s) garlic, minced
3/4 cup(s) brown rice
1/2 cup(s) tomato paste
1 tablespoon(s) cider vinegar
3 cup(s) vegetable broth

Steps:

  • Rinse lentils. Soak, covered in hot water for at least 30 minutes.
  • Heat olive oil in bottom of large pot. Saute the onion in the olive oil until it begins to brown. Stir in the seasonings and garlic and continue cooking until fragrant. Add the brown rice, and saute until it begins to brown. Drain soaked lentils and add to rice mixture. Stir in the tomato paste, vinegar, and broth. Bring to a boil. Lower heat to simmer, cover tightly, and cook until the rice and lentils are tender, about an hour.
  • Cook macaroni in salted, boiling water until tender. Drain and top with lentil and rice mixture. Serve and enjoy!
