LENTIL LOAF image

Number Of Ingredients 12

2 cups water
1 teaspoon salt
1 cup lentils
1/2 cup chopped onions
1 cup quick oats
3/4 cup shredded cheddar cheese
1 large egg
1/2 cup spaghetti sauce
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon seasoned salt (Lawry's)
1/4 teaspoon black pepper

Steps:

  • In a small saucepan, bring the salt and water to a boil. Add the lentils, reduce heat to a simmer, and simmer (covered) for 30 minutes or until lentils are tender. Drain and mash the lentils in a mixing bowl. Stir in onion, oats and cheese, egg, sauce, garlic, Italian seasoning, seasoned salt and pepper. Spoon into a greased loaf pan and bake at 350 F for 35 minutes or until the loaf is dry, firm and golden brown. Cool in the pan for about 10 minutes. Run a sharp knife around edges of pan then turn out loaf onto serving platter. Serve with some of the tomato sauce on top.
