Julie's Chicken and Stuffing Casserole image

Number Of Ingredients 12

1 pkg (8 oz.) stuffing mix with seasoning
1/2 cup melted margarine
1 cup water or chicken broth (chicken broth is best)
2 1/2 cups cooked and diced chicken (4 breasts)
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup mayonnaise
3/4 tsp salt
3 eggs
1 1/2 cups milk
1 can cream of mushroom, celery or chicken soup
Grated cheese for topping

Steps:

  • Mix stuffing, margarine and water/chicken broth. Toss and blend. Spray 9 x 13 pan with Pam or like product. Place 1/2 stuffing mixture in pan. Mix chicken, onion, celery, and mayo. Spread over mixture in pan. Top with remaining stuffing mix.
  • Beat eggs. Add milk. Pour over the top of the mixture. Pour soup undiluted over mixture. Sprinkle with cheese. Can be refrigerated overnight.
  • Bake 1 hour at 325 - 350°F uncovered. May add mixed vegetable if desired. Enjoy!
