Hearty Vegetarian Cashew Potatoes image

A full hearty meal for the hungry vegetarian.

Number Of Ingredients 12

4 cups cubed potatoes
1 (16 ounce) can diced tomatoes
¾ cup minced onion
3 tablespoons butter
1 ½ teaspoons minced garlic
½ teaspoon salt
1 ½ cups cashews
1 ½ ounces fresh spinach
1 ½ teaspoons red pepper flakes
1 cup shredded Cheddar cheese
¼ cup ranch dressing
¼ cup hot sauce, or to taste

Steps:

  • Combine potatoes, diced tomatoes, onion, butter, garlic, and salt in a stockpot; bring to a boil. Reduce heat, cover, and simmer, stirring every 10 minutes, for 25 minutes. Remove the lid and continue cooking for 10 minutes more.
  • Stir cashews and spinach into potato mixture; cook until spinach is lightly wilted, about 3 minutes.
  • Transfer potato mixture to a serving dish; top with Cheddar cheese, ranch dressing, and hot sauce.
