Hearty Meatball Stew image

Meatballs are so moist,and stewed veggies are delish.

Number Of Ingredients 17

1/2 lb lean ground sirloin beef
1/2 lb ground itailian sauage or link with casing removed.
3 Tbsp water
1 slice bread
1 egg
chopped parsely( or 3 tbs dried ) to taste
salt and pepper to taste
olive oil, extra virgin for browing meat
flour for coating meatballs
1 red bell pepper thin strips or chopped
1 small onion
15 oz canned crushed tomatoes or diced.
2 medium potatoes peeled & chopped
1 1/2 c green beans frozen
2 c chicken stock, light
1 1/2 c .chopped mushrooms
2 tsp crushed red pepper flakes or to taste

Steps:

  • 1. In small bowl add 3 tbsp.water & crumble 1 slice bread and mash into water.(this makes the meatballs so moist). Then mix with clean hands your meats,add egg,salt pepper,and the water bread mixture till mixed well.Roll into 1 1/2 inch balls.
  • 2. Add olive oil to saute pan to cover bottom,and heat on medium low while you prep meatballs in flour. Roll each meatball to coat in flour and add to heated oil,& saute till brown all sides.
  • 3. Chopped all veggies and place in cooking pan(needs to be deep)to hold everything.Add your red pepper flakes to taste and your chicken stock then when meatballs are brown transfer to pot and cook (simmer) uncovered over medium to med high heat till veggies,onion tender. Enjoy! I serve my with cornbread wedges.But garlic bread toast would be good also.
