Haupia Coconut Pudding image

This is my grandma's traditional Hawaiian recipe. Traditional Hawaiian dessert. Originally haupia was prepared with arrowroot (pia) mixed with coconut cream. It was wrapped in ti leaves and baked in the imu.

Number Of Ingredients 4

12 oz coconut milk, frozen or canned
10 Tbsp sugar (just shy 1 cup)
1/2 c cold water
10 Tbsp cornstarch (just shy 1 cup)

Steps:

  • 1. Combine cold water with cornstarch and blend until smooth.
  • 2. Then combine with coconut and sugar in a sauce pan and stir until thick over medium heat. Lower heat and cook for 10 minutes, stirring to prevent lumps and to keep from burning. Mixture will get smooth and glossy.
  • 3. Pour into an 8 inch square pan and chill until set. Cut into 1 inch squares.
  • 4. Haupia Twist: Substitute the coconut milk with 1 can of crushed pineapple and blend to liquify (use a blender or food processor). Continue with directions above and layer on top of the coconut layer.
