GRILLED STEAK WITH MOREL SAUCE image

GRILLED STEAK WITH MOREL SAUCE
6 steaks, with or without bone
2 Tbsp olive oil
1 bottle Napa Station Cabernet Sauvignon
1 small onion, minced
1 Tbsp flour
1/2 cup beef broth
1/2 tsp fresh thyme
4 cloves garlic, peeled but left whole
1 bay leaf
12 pearl or small onions
1-2 cups fresh morels
Salt and freshly ground pepper

Steps:

  • 1. Prepare grill to get coals white with ash. 2. In a heavy skillet, quickly brown steaks in olive oil over medium heat. Remove and place on grill to cook to desired doneness, basting with Cabernet Sauvignon while they cook. 3. Meanwhile, add onion to skillet and cook until golden brown and tender, about 2 minutes. Sprinkle with flour and cook, stirring for 3 minutes. 4. Add 1/2 cup Cabernet, broth, thyme, garlic, bay leaf, pearl onions and morel mushrooms. Bring to a boil, reduce heat to low and simmer until steaks are done. 5. Season steaks with salt and pepper and place on individual plates. 6. Spoon sauce over the each and accompany with grilled seasonal vegetables.
