Number Of Ingredients 13

1# bulk pork sausage (Jimmy Dean's)
2 celery ribs, chopped
1 medium red onion, chopped
5 green onions, chopped
2 T. butter
4 c. stuffing cubes (I use a sturdy, unseasoned white or sourdough bread)
2 c. chicken broth
1 c. chopped walnuts
1 c. dried cranberries (or less)
3/4 c. chopped dried apricots (or less)
2 T. minced fresh parsley
1/2 t. minced fresh rosemary, or 1/8 dried, crushed
1/2 t. pepper

Steps:

  • In a large skillet, cook sausage over med. heat until no longer pink; drain and set aside. In the same skillet, sauté the celery and onions in butter until tender. In a large bowl, combine the stuffing cubes, broth, walnuts, cranberries, apricots, parsley, rosemary, pepper, sausage and onion mixture. Transfer to a greased 9x13 baking dish and bake, uncovered, at 375 for 25-30 minutes until lightly browned.
