Ciao Bella Italian Meatloaf image

I developed this recipe when my husband said he loves meatloaf but always hated ones with green bell pepper. Of course I had to put an Italian touch to it! I'm pretty proud of this recipe as I can say it is completely my own creation! Enjoy!

3 lb ground beef 80/15 or meatloaf mix
1 can(s) ( 15 oz )tomatoes, canned italian-style and diced, no salt added (with oregano,basil and garlic),divided
3 slice white bread,crusts removed
1/4 c milk
3 large eggs, slightly beaten
1 c parmesan cheese
1 bunch italian parsley, chopped
1 medium onion, grated
2 tsp salt
1/2 tsp pepper
2 Tbsp bread crumbs
2 Tbsp additional parmesan cheese
3 Tbsp olive oil

Steps:

  • 1. In a small bowl tear white bread into small pieces, add milk until well absorbed. Set aside.
  • 2. In a large bowl combine ground beef,3/4 of the canned tomatoes(with juices), slightly beaten eggs, white bread with milk, 1 cup parmesan cheese, parsley, grated onion, salt and pepper.
  • 3. Once mixed well place in a 9" X 13" pan and form into a loaf. Spread remaining 1/4 of canned tomatoes(with juices) on top. Sprinkle with additional 2 tablespoons of parmesan cheese and bread crumbs. Drizzle with olive oil.
  • 4. Bake for 1 hour to 1 hour and 15 minutes, or until juices run clear, at 350 degrees.
  • 5. Let rest 15 minutes before slicing so it doesn't fall apart.
