FROZEN LIME PIE image

Crust in 9 in pan
1 1/4 c Graham cracker crumbs
Tbsp sugar
Tsp cinnamon
3/4 stick melted butter
Filling
1 c lime juice
4 separated eggs
2 15 oz cans condensed sweetened milk
pinch salt
finely grated rind of 2 limes

Steps:

  • Crust: Preheat oven to 375F Mix graham cracker crumbs with sugar and cinnamon Add melted butter and stir with rubber spatula pressing mixture against side of bowl (will look crumbly) Push large piece of aluminum foil into glass pie dish, so it's smooth. Fold edges over the rim Put crumb mixture in and press evenly against bottom and rim; make a firm top edge with your fingers Bake at 375F for 8 mins or until lightly browned on edges Cool and freeze for an hour or longer until frozen solid Remove from freezer and carefully lift foil/crust from pie dish then carefully remove foil from pie crust, supporting the crust at all times Place crust without foil back into pie dish Filling Mix lime rind and juice In another bowl stir egg yolks just to mix and gradually mix in condensed milk and rind and juice, stirring until smooth Add salt to egg whites and beat until stiff but not dry Fold into lime juice mixture in 2-3 additions Pour filling into crust. Not all will fit. Freeze the pie for 20 mins until semi-firm, then add the remaining filling, mounding it in the center Freeze for 4-5 hours, then cover with plastic wrap and then can be kept frozen for 2 days Leave out for 10 mins before serving
