Number Of Ingredients 8

8 Eggs
1/2 cup Milk
1 1/2 teaspoon Salt
1/2 teaspoon Pepper
1/2 cup Onions
1/2 cup Meat (optional): bacon, sausage, proscuitto, etc.
2/3 cup Grated Cheese (optional): Goat, Cheddar, Gouda, Fresh Mozzerella
2 cups Vegetable Combination (optional): Broccolini, Asparagus, Spinach, Tomato, Peppers, Garlic

Steps:

  • Preheat Oven to 350 degrees
  • Heat 1 1/2 TBLS oil in ovenproof pan over a med-high heat
  • Saute any combination of vegetables until almost done (5-10 minutes depending on the vegetable)
  • While Vegetables are sauteing, beat eggs and milk together until just combined. Add salt and pepper.
  • Arrange Vegetables evenly around the pan. Ensure sides and bottom of pan have a light coat of oil from saute. If needed, brush some around so eggs will not stick.
  • Pour egg mixture over vegetables. Sprinkle meat evenly into eggs. Sprinkle cheese on top. Cook over med-high heat for 5-7 minutes, just until eggs are set around the perimeter and start to pull away from sides.
  • Turn off stove and put pan in the oven for 16-18 minutes.
  • Can be eaten warm or room temperature. Fabulous the next day, too.
