This is my simple alternative to strawberry shortcake, when in a hurry. I usually use frozen biscuits, but tonight I used grands. Either works great. I think the home made whipped cream and added preserves adds a special touch. Enjoy!

Steps:
- 1. Wash strawberries and slice. Mix with sugar and set aside.
- 2. Mix sugar and cinnamon, brush biscuits with melted butter and sprinkle each with sugar/ cinnamon mixture. Bake according to package directions.
- 3. Whip cream, sugar and vanilla until stiff peaks form. Refrigerate until ready to use. When ready to serve, cut top of biscuit a little less than half of biscuit. You want a thicker base and thinner top. Spread base of biscuit with strawberry jam, strawberries, whipped cream and a few more strawberries and some juice. Top with cinnamon sugar portion of biscuit.
