ESCAROLE, ENDIVE & WALNUT SALAD image

Number Of Ingredients 8

1 large head escarole
3 Belgian endive prepped
2 T wine vinegar
1 T dijon
1/2-1/2 c walnut oil
s&p
1 bunch radishes sliced thin
[gorganzola or other blue optional]

Steps:

  • Tear escarole leaves, wipe endive leaves. Beat together vinegar, mustard, s&p. Beat in walnut oil in stream. In large bowl, toss escarole w/ 1/2 of the dressing. tfr to salad bowl. toss endive w/ 3T dressing, arrange in bowl. Toss 1 bunch sliced radishes & 1/2 c walnut halves or pieces w/ remaining dressing. add to salad.
