Steps:
- Make enchilada sauce. Reserve 1/3 cheese for topping. Preheat oven to 350. Grease enchilada pan (9x13" baking dish). Layer beans, cheese, & onions (& meat, if using) in tortillas, roll, & line up in pan. (Or: tear tortillas into pieces and layer ingredients in pan without rolling, as you prefer.) Cover with sauce & sprinkle top with cheese. Bake at 350 for 15-20 minutes, until cheese is melted and enchiladas are hot. Garnish with green onions & serve.
