EMERIL'S DEEP FRIED TURKEY image

Yield 2 turkeys

Number Of Ingredients 14

2 fresh turkeys, 8-14 lbs each
1 c salt (rub)
1/2 tbsp cayenne (rub)
1/4 tbsp black pepper (rub)
2 tbsp Lea&Perrin worcestershire
1 tbsp crab boil
1/4 c apple cider
3/4 c honey
1 bottle beer
1 tbsp salt
1 tbsp allspice
1/2 c Creole spice
1/4 tsp cayenne
pinch of clove

Steps:

  • 1. Season and cure turkey with rub of skin and cavity overnight 2. In a blender, add all wet incredients and then dry ingredients. Puree on high for 4-6 mins. Make sure all ingredients are completely pureed and add to injector. 3. Heat fryer to 350. While oil is heating, inject turkey with marinade (about 1 hr to heat up oil) 4. Fry in roaster and 3 mins/lb. remove from fryer and let sit 10 mins.
