This is a recipe I have had for a while and tweaked it a bit to add some veggies. It is so cheesy and a great way to use leftover ham.

Steps:
- 1. A large non stick skillet works best. Cook the onions and bell pepper on medium-low heat in oil just until softened.
- 2. Add the potatoes, ham and mayonnaise. Stir well until well heated.
- 3. Stir in the cheese until melted. Serve and enjoy as main meal, lunch or a side!
