EASY AND DELICIOUS HAM AND POTATO SOUP
This is a delicious recipe for ham and potato soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc., and it still turns out great.

Steps:
- Combine potatoes, cauliflower, corn, cooked ham, onion, celery, and garlic in a large soup pot and cover with water. Bring to a boil, reduce heat to medium, and cook until potatoes are tender, 10 to 15 minutes. Stir chicken bouillon, salt, and white pepper into mixture.
- Melt butter in a saucepan over medium-low heat; whisk in flour to make a paste. Cook for 1 minute and gradually whisk milk into flour mixture until smooth. Continue cooking until thick, 4 to 5 minutes, whisking often.
- Stir milk mixture into soup and cook until heated through, 5 to 10 minutes.

This is an easy dish to make that is great served at any time of day. I sometimes crumble some crispy bacon in there for even more flavour variety! It has a nice zing to it due to the spices but is not overpowering.

Steps:
- Heat oil in large skillet over medium-high heat until sizzling.
- Add cubed potatoes and the last six ingredients to pan.
- Fry potatoes until golden brown and fork tender, stirring occasionally.
- Then add the butter and diced onion. Mix.
- When the onion has softened slightly, add the ham to the pan and mix again to combine.
- Once heated through sprinkle the cheese over hash.
- Serve when cheese has melted.

- Preheat oven to 350degrees.
- In Large mixing bowl combine the two soups (dont add water), sour cream and mix well.
- Add ham and onions and mix then add veggies and potatos and mix it all
- Put entire mixture into casserole dish and bake for 25 minutes.
- Sprinkle cheese over the top and bake 5 more minutes.
- Let cool 5 mins and enjoy!

HAM AND POTATO CASSEROLE (EASY AND ECONOMICAL!)
Another old family recipe, handed down mother to daughter. I assume it is Irish, because it was from that side of the family, and it also makes a LOT! Fortunately, it is excellent reheated (and better the next day, too!) My mother always made this with leftover holiday ham, which makes it even more economical. Can be baked in the oven (very slow!) or cooked on the stovetop (my preferred choice).

- Grease a heavy pot or Dutch oven.
- Layer about 1/3 of the potatoes into the bottom of the prepared pot.
- Spread 1/2 of the luncheon meat on top.
- Sprinkle with about 1/2 of the margarine and about 1/3 of the salt. Repeat the steps once more, then layer the remaining potatoes and margarine on top. Season with salt.
- Pour milk over potato mixture and cover.
- Heat pot over medium-high heat until milk begins to bubble, then reduce heat to medium-low. Simmer until potatoes are tender, about 20 minutes.

NIF'S EASY CHEESY HAM AND POTATO FRITTATA - 4 WW PTS.
I like to make frittatas with pasta or potatoes when I'm feeding a few of us and this is what I made this morning for brunch. This is one of the lighter ones, but you can use full fat ingredients if you want to. Just DON'T SKIP THE BAKING POWDER - you'll be surprised how fluffy this makes your eggs. Enjoy!

- Heat oil over medium heat in large nonstick ovenproof pan. Saute potato, ham and onion (not green onion yet) until potato is just tender.
- Meanwhile, whisk eggs, egg whites and baking powder until frothy and baking powder has dissolved. Add green onion to pan. Gently pour egg mixture into pan, covering the ham and veggie ingredients. Sprinkle cheese over top.
- Place pan, uncovered, in 375F preheated oven. Cook until egg has set, about 25 minutes.

- Melt grease or butter in medium skillet over medium heat.
- Add onions; saute until translucent.
- Add potatoes and a generous pinch of pepper and salt; cook over medium-medium-high heat until potatoes begin to brown, turning mixture over in pan occasionally to promote even browning.

- 1. Wash and diced potatoes. Place in glass microwave safe bowl and cover with a damp paper towel across top of bowl. Microwave on high 4 minutes
- 2. Prick bottom of pie crust. Dice ham and cover bottom of pie crust. Cover ham with shredded cheese. Cover cheese with cooked potatoes.
- 3. In bowl whisk together milk and eggs. Add seasoning and whisk again. Pour over ham, egg and potatoes and bake at 350 approximately 35 minutes until eggs are done.
