Steps:
- Preheat oven to 350°F. Wash and cut potatoes into cubes. Boil until soft. Drain. Return to pot. Add milk, butter, 1 cup of cheese and salt (add more milk for creamier texture). Mash potatoes.
- Brown beef in skillet with onion. Drain fat from beef. Return to skillet, turn heat to low and add soup. Stir well.
- Line bottom of casserole dish with beef. Drain corn well and layer on top of beef mixture. Sprinkle the rest of the cheese evenly over corn. Top with mashed potatoes.
- Bake uncovered for 25 minutes or until peaks of potatoes turn brown.
