Easy Cheesy Shepherd's Pie image

6 russet potatoes
1 cup milk
1/2 stick butter
1 package (2 cups) shredded cheddar cheese, divided
1/2 tsp salt (or more to taste)
2 lb hamburger
1 onion, diced
1 can cream of mushroom soup
2 cans corn

Steps:

  • Preheat oven to 350°F. Wash and cut potatoes into cubes. Boil until soft. Drain. Return to pot. Add milk, butter, 1 cup of cheese and salt (add more milk for creamier texture). Mash potatoes.
  • Brown beef in skillet with onion. Drain fat from beef. Return to skillet, turn heat to low and add soup. Stir well.
  • Line bottom of casserole dish with beef. Drain corn well and layer on top of beef mixture. Sprinkle the rest of the cheese evenly over corn. Top with mashed potatoes.
  • Bake uncovered for 25 minutes or until peaks of potatoes turn brown.
