Easy and Elegant Cheese Souffle image

An amazingly easy and yummy way to make a souffle, the source is my old copy of "Diet for a Small Planet". Now an old favorite, this was one of the first recipes I mastered as a teenager while teaching myself to cook and it was a big hit with my boyfriend at the time. Serve it for breakfast with some fruit or for dinner with a green salad.

Number Of Ingredients 8

3 cup(s) grated cheddar cheese (i like extra sharp)
4-6 slice(s) whole grain bread
2 cup(s) milk or 1 1/2 c milk and 1/2 c white wine or vermouth
3 - eggs
1/2 teaspoon(s) salt
1/2 teaspoon(s) worcestershire sauce
1/2 teaspoon(s) dry mustard
- pepper

Steps:

  • Layer the cheese and bread in an oiled baking dish, starting with the bread. Pour over it the milk or milk mixture.
  • Beat, with the eggs, the salt and remaining ingredients and pour this over the bread mixture. Let stand for 30 minutes.
  • Bake at 350 degrees F for 1 hour in a pan of hot water. Serve immediately. Use a deep dish if you want this to appear more like a souffle. If you use a shallow dish it will appear more like a quiche.
