Congo Cookies image

Mom made these when we were kids in the '60s. I loved learning to measure and helping mom. Loved smelling them baking, but mostly loved eating them!

Number Of Ingredients 9

2/3 c butter, melted
1 lb light brown sugar or 2 1/4 cups
3 eggs
2 3/4 c all purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
1 c pecans, chopped
1 pkg semi-sweet chocolate chips

Steps:

  • 1. Preheat overn to 350 deg. Melt butter, add sugar. Beat until well blended. Add eggs and beat until smooth. Let cool.
  • 2. Mix dry ingredients: flour, baking powder, salt. Add to butter mixture and stir well. Add vanilla, chopped pecans and nuts.
  • 3. Grease and flour, or line pan with parchment paper. 13 1/2 x 15 x 2" pan at 350 deg for 35-45 min.
  • 4. While warm cut into finger-length bars. Makes 35.
