Steps:
- Mince pears. Combine with broken cinnamon and 3 1/2 cusps cold water. Simmer 15 minutes. Ladle into jelly bag and drip for 2 hours, scrapping occasionally with spatula. Ad hot water to make 5 cups juice. Combine juice and lemon juice. Add pectin gradually, stirring vigorously and bring to full rolling boil that froths. Stir in butter and sugar and bring to full rolling boil for 1 minute. Remove from heat. Ladle into jars. Insert 1 cinnamon stick into each jar and seal.
